{Recipe} Breakfast Burritos

In the past I’ve spoken about trying to find some breakfast ideas that I can make ahead and freeze for hubby to take with him on work days.

One of the recipes I discovered was Breakfast Burritos.

Just like the Egg Muffins, I found these on Second Chance To Dreams collection of 25 make ahead back to school breakfasts. Originally from Mom On Timeout.

I have used some different ingredients and made them a little healthier. You could really use any ingredients you like. I have made these 4 times now and used different ingredients each time, with the exception of the wraps, cheese and eggs which are the staple ingredients.


12-14 wraps (tortillas)
8 eggs
1/4 cup of milk
Approx 3 cups of grated cheese
1 sweet potato
2 potatoes
1 diced capsicum
4 rashers of bacon
1 1/2 cups of diced ham
1 eggplant


Mix the eggs and milk in a bowl. Then cook the eggs in a fry pan, making scrambled eggs.

{Recipe} Daddy’s Baby Bircher

My hubby is pretty proud of the fact that this is currently Dora’s favourite breakfast. She usually finishes hers and moves on to ours.
The quantities below should make 2 or 3 toddler sized serves. If you would like to make some for yourself, double the quantities.
When we make it for ourselves, we add pepitas and sunflower seeds.

(makes two to three toddler sized serves)

1 cup rolled oats
1/4 cup sultanas
1 shake (1/4 tsp) cinnamon
Organic apple juice
1 dollop of natural yoghurt (or yoghurt of your choice)

Optional toppings: grated apple, stewed fruits or your favourite berries.

Put the oats, sultanas and cinnamon into an airtight plastic container and shake to mix.
Cover the mix with organic apple juice (you can water this down if you’d prefer) until it just covers the oats.
Leave the mix soaking overnight in the fridge.
In the morning, serve the amount you think your toddler will eat. Dora eats half so we keep the rest in the fridge for the next morning.
Mix in the yoghurt and top with grated apple, stewed fruit or berries.

{Recipe} Egg Muffins

As I have mentioned in my previous post Scrolls, I have been on the look out for some breakfast ideas that hubby can take to eat on his way to work.

Kaz found a great Blog for me called Second Chance To Dream, which has a post 25 Make ahead back to school breakfasts. There is a list of recipes with links to the blogs they are from. There is a few of these that I definitely want to try.

Today, I decided to start by giving the Egg Muffins a go. This recipe is from Kalyn’s Kitchen.

I can’t wait to explore these blogs more as I think there will be some great finds on both.

A huge variety of ingredients can be used in these muffins. It is up to you what you like and want to add. Today I used what I had on hand in our fridge. These are not only good for hubby to take for breakfast but they will be great for B1 and B2 as well. I used my mini muffin tray to make some smaller ones for them at the same time.
